The Cuvée KALK & KREIDE combines 55% Chardonnay and 45% Pinot Blanc grapes from the best vineyard plots in Saulheim. The idea here is to bottle a natural white Burgundy cuvée with a long full yeast storage and minimal addition of sulphur.On the nose it shows smoky and yeasty notes with robust features. On the palate it appears opulent and mature, but it is carried by a noticeable, salty minerality. There is also a fine wood spice that rounds off this liquid work of art. In the finish, this top Burgundy cuvée challenges the palate and shows off its creamy, yeasty length.ABV 12.5%

After selective harvesting in several stages according to the ripeness of the grapes, the berries were lightly crushed in the cellar and left in their juice for 6 hours to achieve better aroma extraction. This extract-rich Chardonnay & Weissburgunder was spontaneously fermented with natural yeasts and stored on the full yeast for about 10 months until the end of July 2022. The yeast was stirred up every month (batonage process) to give this wine even more fullness and creaminess. The expansion took place in 500l tonneau wooden barrels and traditional oak barrels with a new wood content of approx. 30%.ABV 12.5%
