Yet when planted at the best vineyard sites on limestone and chalk, it seems to blossom into something perfumed and quite fruity, redolent of peaches and fresh pears. Characteristic herb notes are fresh and nuanced, highlighted against brisk citrus and apple flavours and a silken supple mouthfeel. Mineral, perhaps even crystalline, in style this elegant bottling showcases also pristine grapefruit and tangerine flavors. It's full-bodied yet silky, uplifted by a swathe of freshly cut grass and mint that lingers long on the finish.

Impressive new wave German wines from this Rheinhessen estate. Thörle is a family domaine based in Saulheim in the Rheinhessen, and since 2006 it has been run by Christoph and his brother Johannes. The vineyards are managed organically, and the domaine is being taken in a biodynamic direction.The name Probstey was first mentioned in the 13th century, when the famous Rheingau abbey Kloster “Eberbach” and Kloster “Sankt Maria zu Mainz” owned some of the best parcels of this vineyard. The Probstey is a wind-open, south-facing slope with up to 35% in steepness and a very warm microclimate. The yellow sand and limestone soils result in rich, full-bodied wines, balanced with precise acidity.
