The newest addition to our Paolo Cottini wines. There were only 3280 bottles produced and each one is individually numbered. This wine is dedicated to Paolo's wife Sara and the story behind it is.....A few years ago when Sara, Paolo's wife decided to join this new adventure they acquired a new vineyard in the Negrar area where they have a little parcel of Rebo and Corvina Veronese. They decided to vinify this little parcel and this is how Desiderio di Sara (Dedicated to Sara) was born.
A Veronese IGT, product following the traditional drying process method with a blend of Corvina (15%) and (85%) Rebo ( a viticultural experimentation of Rebo Rigotti, a researcher. From the genetic cross between Merlot and Teroldego, it has mineral aromas mixed with those of wild berries, with a vivid red visual impact and an equally full, soft taste.)The result is a delicious well-structured wine that has a deep red ruby color. Full of red fruit with sweet spices, it's rich and satisfying. The good balance and the good structure plus the vibrant acidity can evolve positively for a decade.ABV 14.5%

“Paolo Cottini” is the brand name by which Paolo and Sara wish to engage their personal identity to the wines they produce. The winery is a new “wine reality” but Paolo Cottini’ family has long been linked to this passion; this is in fact the third generation involved with Silvano, Paolo’s father, teaching his son the art of producing quality wine. The winery is located in the heart of Valpolicella, precisely in Castelrotto, a small medieval village in the municipality of San Pietro in Cariano, located at the top of a hill. The castle, which gives the name to the village, has been destroyed but its walls, remained at the highest point of the hill, are still the symbol of royal dignity and testimony of its military function. The vineyards are located in two areas of the historic Valpolicella, in Negrar valley, precisely in Ca 'del Gallo, at an altitude of about 580 mt. facing south-west, and Valgatara area, at an altitude of about 250 mt. facing south-east. This decisive differentiation in topography and altitude conditions lead to quality grapes with distinctive and unique characters which, combined in various proportions, give life to their wines.
