Product Description
The estate wines grow in vineyards around Saulheim. The soils are characterized by limestone sediments and loess-loam layers.After selective harvesting in several stages, the berries were lightly crushed in the cellar and left in their juice for 12 hours to achieve better aroma extraction. The must was fermented with natural yeasts from the vineyard for 6 weeks in 90% stainless steel and 10% older wooden barrels (German oak) and bottled in March 2022 after 5 months of full yeast storage.

This is quite powerful for an entry level wine (Gutswein), but it carries this so well thanks to the ample pear and pomelo fruit and lively, moderately citric acidity. Good chalky minerality at the long finish. This is what other many other producers are selling as village wine! Wild fermented and matured for almost half a year on the full lees.
