Fermentation was predominantly in stainless steel tanks with selected yeasts to enhance the aromatic qualities of the wine. A small portion was fermented in seasoned French oak barriques to add richness and depth to the palate, something you only get in "serious and sensuous" Sauvignon Blanc. This oak ageing technique also gives the wine greater longevity, the having developed gorgeously over the last couple of years. We still have the dominant fresh fruit characters, but they've mellowed a bit and the wine has developed real complexity and rich "secondary characters". In a word, gorgeous.
