The grapes are picked exclusively by hand at the ideal moment of their ripeness at the beginning of October. The pressing, the vinification and the wine-maturing takes place in our winery in Saulheim. Prior to pressing, we leave the crushed grapes 18 hours on their skins to extract a maximum of flavour compounds. The musts are fermented spontaneously with natural yeast – in 40% new French Tonneau barrels (500l) from Tonnellerie Taransaud and 60% in used 2-3 year old oak French oak (500l). After a maturation of 8 months on fine lees, the wine is bottled directly in our cellar
