The clay and chalk soils at Miraval are also important for quality, helping to regulate water supply to the vines so they have water when they need it and drainage when they don‘t. At harvest, the grapes are hand-picked in the coolness of the morning and hand sorted twice to ensure that only the best grapes go into the wine which blends Grenache, Cinsault, Rolle and Syrah.\r\n\r\nAll the grapes for the Miraval Côtes de Provence Rosé are gently pressed to extract just the right amount of colour, except for the Syrah, which is vinified using the saignée method. Each variety is fermented separately in temperature-controlled, stainless steel tanks and then blended post fermentation. Additionally, the Rolle is put into 228 litre barrels and bâtonnage is practised to add texture and complexity. The wine is a beautiful pale pink with enticing aromas of raspberries, cherries and hints of garrigue. The palate is dry with crisp acidity and a lingering, perfumed finish.
