Details

The 2010 growing season was characterised by moderate cropping levels and a dry autumn allowing a very controlled harvest. Most of the Sauvignon was picked over a 14 day period with a good range of flavours coming from our different vineyard sites.

The grapes were harvested in the cool of the night, gently crushed and pressed to separate the full flavoured grape juice from the skins. The juice is then allowed to settle prior to racking and clarifying.

The wine then undergoes a long cool fermentation before blending and bottling and finally sealing with a screw cap, to retain all of its aromatics and fresh fruit characters.
