Fruit was picked entirely by hand, with production following the traditional, white wine making techniques. Grapes were crushed and underwent pneumatic pressing, with the must then left to settle for up to 24 hours. This aimed at separating the larger parcels of lees from the free juice. Fermentation took place between 20°C and 24°C in temperature controlled cement vats following the addition of indigenous yeasts. After an initial racking off the wine underwent malolactic fermentation. It was then transferred to 228 litre oak barrels, where it was aged for six years without topping up. Roughly 38% of the wine evaporated. During this period of ageing, a veil of yeast typically forms on top of the wine, which gives the characteristically nutty aromas of Vin Jaune.
