The core principles in developing this wine concept were to preserve and maintain the original characteristics and composition of the wine, to express the harvest and to eliminate alcoholic content without the introduction of exogenous chemicals through the de-alcoholisation of the wine.
In terms of production, a normal wine is produced and then the alcohol is removed using a natural process with a spinning cone. This is really important as it maintains the varietal aromas and the aromas normally introduced naturally in the fermentation process.
A perfect wine when you want the real wine experience, but need to avoid alcohol.
