    The grapes Pedro Ximénez are laid out in the sun for several days. Fermentation is stopped, in order to keep the natural sugar of the grapes. Afterwards this wine is fortified and then aged in the "solera and criaderas" system. Dark mahogany in colour and viscous. Redolent of ripe fruit in the mouth, dried figs and roasted coffee beans. Very sweet, velvety and soft in the mouth, with an extremely long after-taste.

    The most common form of pineau des Charentes is white and is made from white grapes such as Ugni Blanc and Folle Blanche. White pineau is aged in oak barrels for a minimum of 18 months.
    However the red or rosé form is also very popular within the region itself. This is made with red grapes, typically Cabernet Sauvignon and Merlot. Red pineau is aged for a minimum of 14 months.
    One rule that applies to both red and white varieties is that the unfermented grape justice or ‘must’ and the cognac it is mixed with have to come from the same producer. Learn More

    Unlike other french aperitifs (Lillet and vermouth) this product is not wine based and doesn’t contain a bitter component. It is sweet like fresh grape juice, but with a good amount of alcohol to balance it out. There is also some acid to balance out the sweetness. It has a honey like flavour with lots of fruit notes. It finishes moderately crisp, but still sweet. Basically it is a rich, full bodied, sweet liqueur wine.

    Well balanced thanks to the remarkably smooth acidity. Great with goose or duck liver, blue cheese and different- not too sweet- desserts. Louis XIV affectionately referred to this wine as "The king of wines, the wine of Kings".
