This allows the winemaker to blend the best wine for each given season. In the cooler years Merlot will be predominant with the Cabernet family giving structure and fresh aromatics. Petit Verdot and Malbec help with complexity, density and colour. In warmer seasons such as 2011 the Cabernet family will dominate the blend. Cabernet Sauvignon 33%, Merlot 27% Cabernet Franc 25%, Malbec 9%, Petit Verdot 6%.

St Henri is a highly successful, alternative expression of Shiraz.
It is unusual among high quality Australian red wines as it does not rely on new oak. It was created in the early 1950s (first commercial vintage 1957) and gained a new lease of life in the 1990s as its quality and distinctive style became better understood.

Penfolds St Henri is rich and plush when young and gains soft, earthy, mocha-like characters as it ages. It is matured in old, 1460-litre vats that allow the wine to develop, but impart no oak character. A small proportion of Cabernet is often used to improve structure, but the focal point for Penfolds St Henri is Shiraz.

The grapes come from the eponymous vineyard, which has been noted for its quality since the XII century. Grapes are left to dry naturally in traditional drying lofts during the cold winter months.</p>

Excellent as an after-dinner wine, or to go with red meat, game, quails and richly-
ﬂavoured dishes. Very good with well-aged cheeses, such as parmesan, pecorino

<p>The vines are  40 - 60 years old, partly ownrooted and managed organically. A spontaneous cover crop grows between the vines which keeps a good natural ecological balance of flora and fauna. 
</p>
<p>
A low yield is ensured through the pruning of the vines down to 6-8 buds/vine in the winter. In June shoot thinning is done as well as removal of leaves and secondary shoots in the grape zone. This results are light weight grapes with 
small berries. The total yield amounts to 45 hl/ha which is about 20% less than a bottle per vine.

Coupled with inclement weather during bloom and stress-inducing heat during grape set, these conditions significantly reduced the size of the grape crop throughout Napa Valley, greatly concentrating flavors.  Clear, mild summer weather, with warm days and cool nights, provided ideal conditions for fully maturing our Cabernet Sauvignon grapes, which were harvested between September 26th and October 16th with a perfect balance of sugar and acidity.

The wonderfully pure, pretty nose of our 2008 Cabernet Sauvignon is redolent of warm berry cobbler, with lovely toasted boysenberry and blackberry scents joined by hints of wild cherry, loamy earth and oak vanillin.  On the supple, beautifully structured palate, the wine offers rich, vibrant blackberry, plum and black cherry flavours framed by perfectly integrated tannins and a long, savoury finish.  Delicious now, this elegantly sumptuous Napa Valley Cabernet Sauvignon will develop further nuance with another 5-7 years’ bottle age.

Spring was characterised by intermittent rainfall which made it difficult to control disease in the vineyards. This lasted until flowering which started later than usual but was followed by very warm weather throughout July and early August. Ripening was slow through September, delaying the harvest which eventually took place in October. Winemaker Paolo De Marchi believes later harvests give wines that are more complex and of higher quality.</p>

Over the years, the winery has grown and modernized but the incorporation of technology has allowed the scale of production to increase without drastically adjusting Gere's wine making principals. The large cellar contains a mélange of oak barrel types, though most are Hungarian, where the premium wines ferment and age under Attila’s sensitive watch.

It can be characterized but with one word: Style. Earlier four vintages provided us with an experience that allowed us to create a wine that we intend to make for a long time. If we compared the Kopár to trees or wood, the '97 would be a 100-year-old pine; the '99 a very tall birch, the '2000 an oak with a thick trunk, and the '2002 vintage would be an elaborate wooden furniture.

This vintage will also show - as do earlier vintages - the real values of Villány and the Gere winery. The Kopár is a mirror that reveals trust and comfort for customers, and a feeling that the wine gave them whatever they expect from it. But eventually, it needs to be said that this wine is slightly different from its precursors: its bouquet has that fine elegance and its taste has that colorful, exciting finish that cannot compare to anything.

In 1850 the estate was divided into the two current Pichon estates. In 1987 the estate was purchased by French insurance company AXA, who immediately appointed Jean-Michel Cazes of Château Lynch-Bages as administrator. Château Pichon Baron's 70 hectares are planted with Cabernet Sauvignon (60%), Merlot (35%), Cabernet Franc (4%) and Petit Verdot (1%). The planting density is 9,000 vines per hectare using a double Guyot training and the average age of the vines is 30 years. The yield is typically 45 hectolitres per hectare, which means that every vine yields two-thirds of a bottle, which is a very mean return!. The vineyard is situated at the southern end of the commune of Pauillac near the border with the Saint-Julien appellation. Grapes are harvested and sorted by hand, and then macerated for 20-30 days, and fermented at 28-32 degrees in temperature controlled stainless steel vats of varying sizes. The wine is transferred into oak barrels for aging after finishing its malolactic fermentation. Wines of Pauillac are most often said to be described by the phrase "iron fist in a velvet glove"!

Near the town of Saint Etienne de Grès, Domain de Trévallon is located within the appellation of Beaux de Provence. Owner and
winemaker Eloi Dürrbach planted his first 3 hectares of vines in 1973 and produced his first vintage of Domaine de Trévallon in 1977. 

In 1993 local authorities changed the regulations for grape production in the appellation of Les Beaux de Provence, lowering the permitted percentage of Cabernet Sauvignon to 20%. Domaine de Trévallon’s red is always a blend of 50% Syrah and 50% Cabernet Sauvignon. Refusing to change his style, Eloi opted to produce his wine as a Vin de Pays (Vin de Pays des Bouches du Rhône). By doing so Domaine de Trévallon, like todays “super-tuscans”, was among the first wineries to choose to go outside local appellation rules to produce higher quality 
wines. Before his death in 2000, René Dürrbach, Eloi’s father, designed a series of 50 labels for Domaine de Trévallon. René, a sculptor and painter, was close friends with many of the founders of the cubist movement, including Fernand Léger and Pablo Picasso. René Dürrbach originally bought the Domaine in 1955 as a vacation house.  At that time there were no vines planted on their land. As homage to his father, each year Eloi chooses a new label painted by his father, that that he feels captures the spirit of the vintage. 

The domaine takes its name from the three small valleys near the vineyards: Tre (three), and Vallon (small valley). The domaine is 20 hectares in total surface, of which 17 are planted. There are 15 hectares of red planted evenly between Syrah 
and Cabernet Sauvignon. Domaine de Trévallon produces only a tiny amount of white wine (45% Marsanne, 45% Roussanne, and 10% Chardonnay) from two hectares of vines. The Marsanne and Roussanne come from Château de Beaucastel. 

Not swayed by wine “fads”, Eloi chooses to produce wines that are built to age. Above all, Eloi produces “natural wines” with as little human intervention as possible. He avoids excess use of technology which he believes leads to standardized, uniform wines. Eloi uses no pesticides or chemicals in the vineyards and he keeps yields below 25 hectoliters per hectare. In the winery the grapes are not de-stemmed, and only natural indigenous yeasts are used. The reds are aged in large oak foudres for 2 years , are non-filtered, and are only occasionally fined with egg whites before bottling.

José I, under the auspices of His Prime Minister, Sebastião José de Carvalho e Mello, Count de Oeiras and Marquis de Pombal.
Formed by the most important farmers of the Upper Douro and the Good Men of the City of Oporto, the Company was entrusted with the task of "sustaining the cultivation of vines, conserving the production of them in their natural pureness, in benefit of Agriculture, Trade and Public Health. Among the numberless services performed by the Company in favour of the public, the outstanding, because of their enormous importance, were the so-called Pombaline Demarcation in the Douro Region, carried out between 1758 and 1761 by the Deputies of the Board of the Real Companhia Velha. Thus the Port wine Region was delimited- being the oldest Demarcated Wine Region in the world. In 1781 the Real Companhia Velha, also known as Royal Oporto Wine Company, presented its Portos to the Imperial lips of Catherine of Russia, through large shipments made in steamers freighted for the purpose. This was the star of Portuguese Sea voyages to the Baltic ports and trade with that country. As a result of the Company's action, exports of the famous wines of the Douro Region underwent considerable and successive increases. During the French Invasions (1809), Napoleon's troops requisitioned the wines of Real Companhia Velha which thus came to be part of the rations of the French soldiers. Almost at the same time (1811), Lord Wellington and his troops were also consuming the Company's Porto Wines. The outstanding element in this was the supply of 300 barrels from the Company's warehouse at Régua, to the army then stationed in Lamego.
In spite of most of the Porto being aged in wood there is a very small but well representative part of the Porto production that is kept aside to be aged in a different way- in bottles. This style of Port is called Vintage Port and has, in the last Century in England built itself a reputation of the very finest and rarest of all Ports, and therefore the ultimate collector's wine. Vintage Port is a selection of the very best wines from an exceptional year, representing only a small proportion of the crop. Their opulent rich grapey characteristic corresponds to unusually excellent wines, of a kind that are probably achieved in only three years in every decade. Full bodied, vigorous, rich in colour and sweetness with powerful heady aromas of the most complex selection of the fruits and wild berry perfumes, Vintage Port is kept in barrels only for two years, till the declaration of Vintage is made (it first has to be approved by the Port authorities). Bottled unfiltered, in traditional black Porto bottles, it is sheltered from light and deprived of contact with air. The ageing process of Vintage Porto is long and slow therefore it is not recommended to be drunk before 10 years of development. The exceptional bouquet, the rich colour and sublime opulent flavour are the hallmarks of a Vintage Port. Because Vintage Port is bottled without being filtered or subjected to any treatment through the ageing a sediment will be formed requiring it to be decanted before being served.

With nearly 40 hectares of vineyard and over 30 different appellations, including six grand crus (Musigny, Bonnes Mares, Clos Vougeot, Charmes Chambertin, Mazoyères, Corton Clos du Roi and Corton Charlemagne), this is one of Burgundy’s leading domaines.</p>
<p> 
No expense has been spared in production terms. The premier and grand cru vineyards are all farmed biodynamically with carefully limited yields. The cellar has been equipped with a battery of new or renovated wooden fermentation vats, a state of the art sorting table and a new model of the old fashioned vertical press which is thought to be the best option for red wines.

It was planted in 1995. Soils here are sandy loam over red/yellow clay with underlying shale.</p>
<p>The vines are planted at a high density of 2,780 vines per hectare and are hand pruned with vertical shoot positioned canopies. The vineyard is a multiclonal blend of I10V1, Bernard 95 and Bernard 76 from Burgundy. Low yields, no more than 2.5kg/vine, are achieved by aggressive pruning and pre-harvest bunch thinning.

      <title><![CDATA[Sassicaia 2009]]></title>

Although the Incisa della Rocchetta family, who are still responsible for Sassicaia today, can trace their lineage back to the Medieval and Renaissance eras, their vineyard and its wine is a much more recent phenomenon. 
</p>
<p>Without wishing to give a detailed account of all Italy's history, the story of Sassicaia probably begins with Leopoldo Incisa, a family member who retired from his post in the Austro-Hungarian government to his family's estate at Rocchetta Tanaro in 1840. 
</p>
<p>Here he was able to pursue other interests, particularly agriculture and oenology; he was an avid collector of vines both native and foreign, and he published several works on these matters. It was not he, however, that planted the Sassicaia vineyard, as this action was down to his great-grandson Mario Incisa della Rocchetta. Although Mario, allegedly inspired by his ancestors work and his writings, planted Cabernet vines on the family estate it was not until he married Clarice della Gheradesca, the heiress to the Tenuta San Guido estate in Bolgheri, that we have the true origins of Sassicaia. 
</p>
<p>The couple were betrothed in 1930, and subsequently settled in Bolgheri after World War II, where they continued the family association with horses by establishing a stud farm which still exists today. Then, in 1940, on land below the castle at Castiglioncello, he began to establish a vineyard, populated with Cabernet Sauvignon. The wine was initially a very personal affair, for consumption within the family, but following an expansion of the vineyard in 1965 the wine of Sassicaia became a more commercial enterprise. </p>
<p>It was released onto the market with the 1968 vintage, marketed by the Antinori family - who are cousins - and the Incisa della Rocchetta clan have never looked back. Although Mario died in 1983, the estate is today in the hands of his son Marquis Nicolò Incisa della Rocchetta (above), who had the great pleasure of seeing the estate receive its own DOC, Bolgheri, in 1994. Today the vineyards amount to 75 hectares, in several plots scattered around Bolgheri. In the very northeast of the region there are vines at Castiglioncello, Doccino and Quercione, at an altitude of between 200m and 300m. 
</p>
<p>There are plots at San Marino and Mandrioli, and then Aianova and the Sassicaia - Italian for "place of many stones", I believe - vineyard itself, with an altitude of 80m. Not far to the south is the Mediterranean Sea and here there is the Bolgheri Natural Refuge, initially a bird sanctuary established by Mario Incisa della Rocchetta in 1959, today a 513 hectare nature reserve, rich in native flora and fauna, and regarded as wetland of international importance. </p>

<p>Turning our attention back to the vines, these are 85% Cabernet Sauvignon and 15% Cabernet Franc, and they have an average age of 30 years. Once harvested the fruit is transported to the winery, which was once located in Castiglioncello, a convenient location for the first vineyards which were close by. Converted farm buildings, once in the possession of the della Gherardesca family, served the purpose.</p>
<p>With the passage of time, however, the Sassicaia vineyards became much more expansive and are scattered across the estate, and in the 1960s a new winery was established near the church of San Guido. This was equipped with climate control and new temperature-controlled stainless steel fermentation vats which range in size from 35 to 110 hectolitres, allowing for separate fermentation of different lots. In addition, new French oak barriques were introduced.</p>
<p>The estate's leading wine, its raison d'être, is of course Sassicaia, which is a blend of Cabernet Sauvignon and Cabernet Franc, the proportions matching those found in the vineyard. This will see 24 months in the aforementioned oak, of which one-third (a figure which has risen in recent vintages) will be new each year. The remainder are one and two-year old barrels.

It is located in the far east of the Pomerol appellation and its vineyards border those of Château La Conseillante, Château Gazin and Château Cheval Blanc. Its 14.1 hectares of vineyards (Merlot 78%; Cabernet Franc 22%) lie on deep gravel beds pitted with sand and clay. </p>
<p>
The wine is vinified traditionally, undergoing a lengthy cuvaison followed by maturation in oak barriques (40% new) for 16-20 months. L`Evangile has always been a top-class estate but quality has been pushed noticeably higher since Domaines Baron de Rothschild of Château Lafite acquired a majority shareholding in 1990

The wine was not château-bottled until 1972 and in 1975 the property was sold to Guy Tesseron, of the Tesseron family, one of the finest exponents of luxury, very old, aged Cognacs (Cognac Tesseron). The Tesserons also own Château Lafon-Rochet in St-Estephe. Today, Château Pontet-Canet is owned and run by Alfred and Michel Tesseron.  Pontet-Canet's 78 hectares of vineyards adjoin those of Mouton Rothschild and are planted with Cabernet Sauvignon (63%), Merlot (32%) and Cabernet Franc  (5%).
 
The Tesserons have vastly improved the quality of the Pontet-Canet wines which are now full-bodied and packed with ripe, chewy, black fruits and finely integrated tannins. The wines possesses marvelous ageing potential.

Ripe aromas of sweet red cherries macerated in alcohol, cedar, cinnamon and pepper.  Suave and seamless, with soft, almost-overripe flavours of redcurrant jam, red plum syrup, stewed red plum and tobacco leaf.  A very distinctive and much creamier than usual Tignanello, finishing with supple tannins and excellent length.  Obviously the product of a warmer year, and though this outstanding Tignanello is a touch less refined than some recent stand out vintages, it's hard to argue with its sweet, soft style and early drinking appeal. Often vines affected are severely pruned or replanted. One half, or an ‘arm’ of the vine is slowly reduced to dead wood. That side may be lifeless and brittle, but the grapes on the other side, while low yielding, display amazing intensity.</p>

<p>
In youth, The Dead Arm is restrained. It will start to show more fruit after five years in the bottle with secondary aged characters starting to develop after that. As an older wine leather, tobacco, mushroom and earth aromas have a presence alongside chocolate and spice characters. With such great balance this wine is expected to age for up to 20 years if cellared in the right conditions. The Dead Arm Shiraz 2007 manages to balance focus and complexity superbly . The structure is muscular and the fruit powerful, yet it maintains a pretty elegance which is allowed to flourish with deft use of oak.

Documents show that the site has been dwelled since the 11th century. Traces of the original construction, which undoubtedly was of defensive nature and which later on had been converted to a rural housing, are still preserved.
</p>
<p>
In 1967, Sergio Manetti, at that time a manufacturer of steel products, bought Montevertine as a holiday house. He restored the house and returned it to its original dwelling destination, and right from the beginning, he planted two hectares of wine and he set up a small cellar. The idea was to produce some wine for friends and customers. 
</p>
<p>
The first vintage produced, 1971, was more than decent and Sergio Manetti decided to present some bottles at Italy’s leading wine show, Vinitaly in Verona, via the Chamber of Commerce of Siena. That was an immediate success and Mr. Manetti was so enthusiastic about it that only a few years later he decided to give up his main former activity, in order to dedicate all his efforts exclusively to winemaking. New vineyards were planted, new cellars installed, and that activity has been continued without any interruption.

<p>Massaya’s first vintage was 1998. Its first Gold Reserve was in 1999. The winery began by making “Arak,” the Lebanese spirit, in a light blue bottle; hence the name Massaya, meaning Twilight. The winery today makes about 250,000 bottles a year, of which about 12,000 are the top Gold Reserve.</p>
<p>
60% Cinsault, 20% Cabernet Sauvignon, 20% Syrah. Vinified in stainless steel tanks, stored in concrete vats, giving the wine a pure expression of fruit.

The palate is very soft due to the ripeness of the firm tannins and an acidity that bodes well for excellent longevity. 
Today this youthful wine is voluptuous and very expressive, particularly of blackberries, roasted red bell pepper, fresh ground white pepper, truffle, and sweet spice. The finish is long, velvety, and very elegant.

The grapes were hand picked, crushed and de-stemmed, then fermented for 7-8 days in temperature controlled stainless steel tanks. Gentle plunging of the cap took place to aid extraction of colour and tannin. The wine then passed into French oak barriques (45% new oak) and aged for 18 months. It was bottled without fining or filtering and aged for a further year in bottle before release.

Sweetly ripe berry aromas jump out of the glass, very cabernet-like and elegant but also ripe and powerful. There is leanness to its profile; its fine-boned, gentlemanly, intensity flavoured and medium to full bodied. Very stylish wine

This wine was exclusively made with grapes from our estates Quinta de Ervamoira (40%) and Quinta do Bom Retiro (60%). 
Deep and wonderful colour, typical of this harvest. Intense, alive of a red mature and with blue reflexes. Aroma rich in mature fruit and full of wild fruits. Bodied and well structured. Excellent potential. In the mouth, aggressive and strong bodied tannins. Excellent red fruit, with a good wood balance. Wonderful and persistent final, providing a long life.

Under the direction of Louis Roederer, between 1832 and 1870, the house gained top-ranking with world-wide sales of 2.5m bottles, including 390,000 in the USA and 660, 000 in Russia where Louis Roederer champagne was an outstanding success.

<p>
In 1876, Louis Roederer II who had succeeded his father created the Cristal cuvee for Tsar Alexander II. Over 134 years later, it remains faithful to its origin, inspired by elegance, purity, and precision.</p>

<p>
A classic, generous year, yielding both quantity and quality. 2004 followed the same climatic 
trends  as 2002 : cool, moderate temperatures throughout the season, a considerably reduced, and 
rainfall (by about 30%) during the growing cycle, which, despite a particularly cold and rainy 
month of August, was fortunately followed by a dry and sunny September, ripening the grapes 
off impressively. The Louis Roederer vineyard team worked intensively in this period, and by the 
20th  September the grapes had attained a “vintage” balance, combining maturity and freshness</p>

<p>
60% Pinot noir - 40% Chardonnay – 20% of the wines vinified in oak barrels with weekly 
batonnage. No malolactic fermentation. To create Rosé champagnes, Louis Roederer still uses the 
saignée method after cold maceration that can last 5 to 8 days in the liquid phase. Cristal Rosé 
is matured 6 years in the cellar and rests for 8 months after disgorgement to perfect its maturity
</p>

<p>
A pastel pink colour with bright, slightly orange glints. Fine, light bubbles in a long-lasting flow. The bouquet is delicate and subtle, with elegant fruitiness (red fruits: strawberry, fig), zesty hints (citrus fruit: lemon and orange) and juicier nuances such as vine peach. There is a deep, slightly 
sweet burst of aromas.
</p>
<p>
In the mouth, the bite is young, springlike and energetic: full-bodied and silky, but based on very mineral freshness. This mineral quality is typical for Cristal Rosé, expressing the chalkiness and saltiness of the Aÿ terroir. The second mouth has airy notes and great aromatic purity, displaying 
the discrete power of this great cuvée. On airing, a few traces of Danish pastry and lightly roasted 
dried fruits hint at its enormous capacity for change.

April featured marked thermal contrasts, with May and June similar. Generous summer conditions settled in. Flowering was rapid. Harvesting ran between 18th September and 3rd October. The Chardonnays produced a rather powerful wine with sufficient vivacity, where citrus, white and exotic fruit aromas predominated.

His son, François Clicquot, married Barbe-Nicole Ponsardin in 1798. Clicquot died in 1805, leaving his widow (veuve in French) in control of a company variously involved in banking, wool trading, and Champagne production. Under Madame Clicquot's guidance the firm focused entirely on the latter, to great success. During the Napoleonic Wars, Madame Clicquot made strides in establishing her wine in royal courts throughout Europe, notably that of Imperial Russia. By the time she died in 1866 Veuve Clicquot had become both a substantial Champagne house and a respected brand. Madame Clicquot is credited with a great breakthrough in champagne handling that made mass production of the wine possible. In the early 19th century, with the assistance of her cellar master, Antoine de Müller, Clicquot invented the riddling rack that made the crucial process of dégorgement both more efficient and economic. Clicquot's advance involved systematically collecting the spent yeast and sediments left from the wine's secondary fermentation in the bottle's neck by using a specialized rack. Composed much like a wooden desk with circular holes, the rack allowed a bottle of wine to be stuck sur point or upside down. Every day a cellar assistant would gently shake and twist (remuage) the bottle to encourage wine solids to settle to the bottom. When this was completed. the cork was carefully removed, the sediments ejected, and a small replacement dose of sweetened wine added. La Grande Dame 1998 has a pale gold color with jade glints. The wine is crystal clear, with unbelievably fine bubbles. At first, typical Chardonnay characteristics come to the nose, with the arrival of floral and mineral aromas. Then notes of citrus fruits, apricots, quince and sweet almond emerge, to reappear later in the mouth. Eventually, rare notes such as peaty malt, tobacco and delicate herbs, are gradually unveiled. This aromatic, impressively layered bouquet is confirmed in the mouth. On the palate, the wine is clear-cut and pure, perfectly balanced with a delightful silky smoothness. La Grande Dame 1998, with its lace-like construction, has a long, lively, and structured finish. This wine has unbelievable aging potential. The 1998 vintage of La Grande Dame, the quintessence of the Veuve Clicquot style, reaches a peak of refinement, without losing its legendary strength produced by a blend including nearly two-thirds of Pinot Noir.
