      <title><![CDATA[Dominio de la Vega Cava Brut Utiel-Requena]]></title>

Dominio are based in one of these areas, Utiel-Requena, an area inland from Valencia with a semi-Mediterranean, semi continental climate.

Dominio's vineyards are planted at up to 907M above sea level on sandy soils mixed with clay and marl. There are no Parellada or Xarel-lo grapes used with white Cava’s based on Macabeo and Chardonnay and rosados on Garnacha and Pinot Noir. The commitment to quality at Dominio de la Vega is significant with strict grape selection, low yields and ageing on the lees for even the entry level Cava of 14 months, way beyond the minimum requirements of 9 months.

In 1988, Nyetimber planted its first vines and today, the House is regarded as one of Englandís
finest wine producers. Owner and Chief Executive Eric Heerema and winemaker Cherie Spriggs are committed to producing wines of a Grande Marque standard. Each bottle of Nyetimber is crafted from one hundred percent estate-grown grapes.

Nyetimber uses only its own grapes from its own vineyards, each of which was deliberately selected to be south-facing with either sandy or chalk soils similar in composition to those found in Champagne. All Nyetimber vineyards are located in the lee of the South Downs which affords them shelter from the coastal winds. Prior to harvest, the grapes are tasted to ensure the best flavour development before picking. Vinification; The grapes are picked when perfectly mature and carefully pressed, with great attention to their quality. Only the juice from the first two pressings is vinified. The heart of the cuvée is then vinified separately: after the alcoholic and malolactic fermentations, the wine is kept on its lees for eight months.

Ageing
In our 19th century cellars, at a depth of 16 meters and a constant 10°C temperature, our young wines become. The combined effect of a second slow fermentation (2 months) and a 3-year ageing on their lees bring out the desired balance and texture.

Pinot Noir planted in the loamy clay soils producing 10 tons/ha coming from their coastal Firgrove Vineyards. Both varietals are hand picked: Chardonnay for fruit and elegance and Pinot Noir for complexity and length of flavour. Produced in the Méthode Cap Classique cellar, Robertson. Whole bunch pressing ensures fractional recovery. After settling of juice the two varieties are fermented separately. They are then crossblended along with reserve wine if necessary, bottled and left for 15 to 18 months yeast contact time before disgorgement. Light yeasty aromas, good fruit on the nose, and rich creamy with a long finish. Fine mousse gives freshness and finesse.

The Chardonnay was selected from Robertson with soils that have high natural limestone content. Both varietals are hand picked: Pinot Noir for length of flavour, Chardonnay for fruit and
elegance. Produced in the Méthode Cap Classique cellar, Robertson. A unique first for South Africa whereby both Pinot Noir and Chardonnay were pressed in the same press. Fractional recovery from the whole bunches ensured that only the quality juice went into fermentation. After fermentation the wine was lightly fined and bottled for the secondary fermentation. A minimum lees contact time before disgorging of 15 months. Great salmon pink in colour makes this wine look extremely attractive. Noticeable ripe strawberries from the Pinot Noir with a creamy complexity from the Chardonnay. An explosion of raspberry fruit together with some fresh sherbet on the palate with a long fine creamy mousse.

<p>Tiny bubbles tickling the palate and give way to a crisp clean finish of peaches and cream with a bit of toastyness/bitterness reminiscent of almonds roasted very dark and a bit of grapefruit</p>

<p>If you like Champagne at all, you'll love this one. It is elegant and focused with a fine perlage, light salmon color, creamy texture and lingering finish. The house is now headed by Francois Billecart, the seventh generation of family owners.</p>
<p>
Francois maintains scrupulous standards for his Champagnes, a follower of his forebears' motto: "Tradition is meaningless without great quality." The house style is light and elegant, with emphasis on finesse rather than power. Clean, crisp acidity is a hallmark of Billecart-Salmon. The secret for this is that about 8% still red Pinot Noir from their own vineyard in Mareuil sur Ay is added to the blend, making for a very elegant and subtle wine.

Under the direction of Louis Roederer, between 1832 and 1870, the house gained top-ranking with world-wide sales of 2.5m bottles, including 390,000 in the USA and 660, 000 in Russia where Louis Roederer champagne was an outstanding success. 
</p>
<p>
In 1876, Louis Roederer II who had succeeded his father created the Cristal cuvee for Tsar Alexander II. Over 134 years later, it remains faithful to its origin, inspired by elegance, purity, and precision.</p>

<p>
A classic, generous year, yielding both quantity and quality. 2004 followed the same climatic 
trends  as 2002 : cool, moderate temperatures throughout the season, a considerably reduced, and 
rainfall (by about 30%) during the growing cycle, which, despite a particularly cold and rainy 
month of August, was fortunately followed by a dry and sunny September, ripening the grapes 
off impressively. The Louis Roederer vineyard team worked intensively in this period, and by the 
20th  September the grapes had attained a “vintage” balance, combining maturity and freshness</p>

<p>
60% Pinot noir - 40% Chardonnay – 20% of the wines vinified in oak barrels with weekly 
batonnage. No malolactic fermentation. To create Rosé champagnes, Louis Roederer still uses the 
saignée method after cold maceration that can last 5 to 8 days in the liquid phase. Cristal Rosé 
is matured 6 years in the cellar and rests for 8 months after disgorgement to perfect its maturity

<p>
A pastel pink colour with bright, slightly orange glints. Fine, light bubbles in a long-lasting flow. The bouquet is delicate and subtle, with elegant fruitiness (red fruits: strawberry, fig), zesty hints (citrus fruit: lemon and orange) and juicier nuances such as vine peach. There is a deep, slightly 
sweet burst of aromas.
</p>
<p>
In the mouth, the bite is young, springlike and energetic: full-bodied and silky, but based on very mineral freshness. This mineral quality is typical for Cristal Rosé, expressing the chalkiness and saltiness of the Aÿ terroir. The second mouth has airy notes and great aromatic purity, displaying 
the discrete power of this great cuvée. On airing, a few traces of Danish pastry and lightly roasted 
dried fruits hint at its enormous capacity for change.

His son, François Clicquot, married Barbe-Nicole Ponsardin in 1798. Clicquot died in 1805, leaving his widow (veuve in French) in control of a company variously involved in banking, wool trading, and Champagne production. Under Madame Clicquot's guidance the firm focused entirely on the latter, to great success. During the Napoleonic Wars, Madame Clicquot made strides in establishing her wine in royal courts throughout Europe, notably that of Imperial Russia. By the time she died in 1866 Veuve Clicquot had become both a substantial Champagne house and a respected brand. Madame Clicquot is credited with a great breakthrough in champagne handling that made mass production of the wine possible. In the early 19th century, with the assistance of her cellar master, Antoine de Müller, Clicquot invented the riddling rack that made the crucial process of dégorgement both more efficient and economic. Clicquot's advance involved systematically collecting the spent yeast and sediments left from the wine's secondary fermentation in the bottle's neck by using a specialized rack. Composed much like a wooden desk with circular holes, the rack allowed a bottle of wine to be stuck sur point or upside down. Every day a cellar assistant would gently shake and twist (remuage) the bottle to encourage wine solids to settle to the bottom. When this was completed. the cork was carefully removed, the sediments ejected, and a small replacement dose of sweetened wine added. La Grande Dame 1998 has a pale gold color with jade glints. The wine is crystal clear, with unbelievably fine bubbles. At first, typical Chardonnay characteristics come to the nose, with the arrival of floral and mineral aromas. Then notes of citrus fruits, apricots, quince and sweet almond emerge, to reappear later in the mouth. Eventually, rare notes such as peaty malt, tobacco and delicate herbs, are gradually unveiled. This aromatic, impressively layered bouquet is confirmed in the mouth. On the palate, the wine is clear-cut and pure, perfectly balanced with a delightful silky smoothness. La Grande Dame 1998, with its lace-like construction, has a long, lively, and structured finish. This wine has unbelievable aging potential. The 1998 vintage of La Grande Dame, the quintessence of the Veuve Clicquot style, reaches a peak of refinement, without losing its legendary strength produced by a blend including nearly two-thirds of Pinot Noir.

It is matured for 3 years in the cellar and rested for 6 months after disgorgement to perfect maturity. Dosage of between 10 and 11 g/l is adapted to each vintage.

Fascinated by the diversity of aromatic expression of the Pinot noir grape in Champagne, Louis Roederer decided to elaborate his Vintage Brut on the structure and power of the Pinot noirs of the Montagne de Reims, where the north-northeast facing vines are slower to ripen and give often rough and closed wines at the start of maturation, the personality of which becomes remarkably more refined and intense under the effects of oak barrels and time. In 1850, he decided to buy more than 15 has of prime Verzenay vineyards so as to control the combination of the grapes for this wine.
</p>
<p>
70% Pinot noir and 30% Chardonnay. About a 30% of the wine is matured in oak casks with weekly lees stirring or "batonnage". No malolactic fermentation which gives the wine a wonderful structure and texture. It is the matured for at least 4 years in the cellars and rested for 6 months after disgorgement to finish it perfectly. Dosage is between 8 and 10 g/l depending on the year.

<p>It then undergoes an average of 5 years maturation in the cellars and rests six months after disgorgement to finish it perfectly. Dosage of between 8 and 10 g/l depending on the vintage.

A great rosé Champagne should be made from very ripe grapes, a difficult feat in the cool Champagne climate.. That is why Louis Roederer decided to invest in one of the most precocious vineyards of the Champagne region, in Cumières, where the light of the steep, south-facing clay and limestone slopes face is accented by the Marne River, producing high phenolic maturity. In selected plots, Louis Roederer applies precision viticulture adapted to the elaboration of a saignée rosé.

Under Madame Clicquot's guidance the firm focused entirely on the latter, to great success. During the Napoleonic Wars, Madame Clicquot made strides in establishing her wine in royal courts throughout Europe, notably that of Imperial Russia. By the time she died in 1866 Veuve Clicquot had become both a substantial Champagne house and a respected brand. Veuve Clicquot is also credited with a great breakthrough in champagne handling that made mass production of the wine possible. In the early 19th century, with the assistance of her cellar master, she invented the riddling rack that made the crucial process of dégorgement both more efficient and economic. This advance involved systematically collecting the spent yeast and sediments left from the wine's secondary fermentation in the bottle's neck by using a specialized rack. Composed much like a wooden desk with circular holes, the rack allowed a bottle of wine to be stuck sur point or upside down. Every day a cellar assistant would gently shake and twist (remuage) the bottle to encourage wine solids to settle to the bottom. When this was completed, the cork was carefully removed, the sediments ejected, and a small replacement dose of sweetened wine added. Bingo! This Vintage 2002 Champagne has been aged for a minimum of three years on its lees and gives delicious aromas and flavours of Brioche, caramelised apple and notes of mushroom and hazelnut.

The wines are quite well-known around the world, where the estate is making an effort to re-establish its presence. Today the wines are made under the guidance of Chef de Caves Frederic Panaiotis, who clearly has an outsize passion for these Champagnes as well as the house’s rich heritage.</p>

<p>Although Ruinart is best known for their vintage Blanc de Blancs, the Rose is perhaps even more fascinating, particularly after a few years in bottle, which in important vintages allows for the Pinot Noir to speak with great eloquence. </p>

<p>The Ruinart wines tend to be medium in body and are made with levels of dosage that are closer to the high end of the spectrum. Although the back labels show codes which can be tracked to disgorgement dates, it would be nice to see Ruinart provide disgorgement dates for its wines</p>

The 2003 is one of the most unusual Dom Perignons I have ever tasted, going back to 1952. Readers will remember that 2003 was a torrid vintage across northern Europe, especially during the critical month of August, when temperatures remained very hot for well over a month. The harvest was the earliest on record, until 2011, that is. I suppose its not that surprising Chef de Caves Richard Geoffroy chose to make a 2003 Dom Perignon, given his penchant for risk-taking, an approach that has yielded so many memorable wines that stretch the perception of what big brand Champagne is and can be. The 2003 Dom Perignon is a big, broad shouldered wine. It does not have the seductiveness of the 2000, nor the power of the 2002. It is instead very much its own wine. In 2003 Geoffroy elected to use more Pinot Noir than is typically the case, and that comes through in the wine's breath and volume. The 2003 is a big, powerful Champagne that will require quite a bit of time to shed some of its baby fat. The trademark textural finesse is there, though. I expect the 2003 to be a highly divisive Champagne because of its extreme personality, but then again, many of the world's legendary wines were made from vintages considered freakish at the time. The 2003 is an atypically, rich, powerful, vinous Dom Perignon loaded with fruit, structure and personality. It is not for the timid, but rather it is a wine for those who can be patient. No one has a crystal ball, but personally I will not be surprised if in 20 years' time the 2003 is considered an iconic Champagne. Under the direction of Louis Roederer, between 1832 and 1870, the house gained top-ranking with world-wide sales of 2.5m bottles, including 390,000 in the USA and 660, 000 in Russia where Louis Roederer champagne was an outstanding success.

In 1876, Louis Roederer II who had succeeded his father created the Cristal cuvee for Tsar Alexander II. Over 134 years later, it remains faithful to its origin, inspired by elegance, purity, and precision.</p>

A non-vintage wine like the Royale Réserve, this Réserve Rosée abides by the historic tradition of style at the House of Philipponnat. The majority of the blend comprises the rich and powerful grapes from the beautiful vineyards of Montagne de Reims in Ay and Mareuil-sur-Ay and its three year ageing process gives it a pleasant complexity without taking anything away from its freshness. This fine rosé is dry yet fruity with hints of strawberries, red currants, and candied fruit peel.
