Although nearly all of Spains Cava is produced in Penedes near Barcelona there are certain areas outside of this authorised for production also. Dominio are based in one of these areas, Utiel-Requena, an area inland from Valencia with a semi-Mediterranean, semi continental climate. Dominio's vineyards are planted at up to 907M above sea level on sandy soils mixed with clay and marl. There are no Parellada or Xarel-lo grapes used with white Cava’s based on Macabeo and Chardonnay and rosados on Garnacha and Pinot Noir. The commitment to quality at Dominio de la Vega is significant with strict grape selection, low yields and ageing on the lees for even the entry level Cava of 14 months, way beyond the minimum requirements of 9 months.
